Crunchy Celery Root & Apple Slaw

1 lb celery root
2 Granny Smith apples
5 Tbsp siggi’s 0% plain skyr
2 Tbsp apple cider vinegar
1 tsp dijon mustard
2 tsp extra-virgin olive oil
1/4 tsp poppy seeds
1/4 tsp coriander seeds
1/8 tsp caraway seeds
1/4 tsp sea salt
juice of 1/2 lemon (for dressing)
1/4 cup, packed mixed herbs (parsley, mint, and dill)
Peel and shred the celery root and apples. Reserve in some cold water with a splash of lemon juice to prevent oxidation. Put aside.
Make the dressing by combining the yogurt, lemon juice, vinegar, mustard, and olive oil. Whisk until well combined.
Toast the coriander and caraway seeds lightly on the stove top until fragrant. Then crush lightly, using the back of a rolling pin. Combine with the poppy seeds and salt.
Toss the shredded celery root and apple with the yogurt dressing. Toss in the seed mixture then the chopped herbs.
Enjoy as a delicious side salad!
