Banana Protein Pancakes

1 1/4 cup old fashioned oats
1 large ripe banana
5.3 oz siggi’s Vanilla 0% Skyr
4 eggs
1 tsp pure vanilla extract
1-2 Tbs maple syrup
1 tsp baking powder
1/2 tsp baking soda
1-2 tsp cinnamon, to taste
1/8 tsp salt
mini chocolate chips, optional

Combine all ingredients in a blender or food processor. Blend until smooth and uniform in texture.

Brush a nonstick skillet with butter or a bit of oil over medium to low heat. Add about 1/4 cup portions of batter for 4″ diameter pancakes. Sprinkle in your chocolate chips if using.

Allow to cook until edges start to harden and bubble on top, leaving craters in the pancakes. About 2-3 minutes.

Flip the pancakes and allow to cook through. About another minute.

Top with siggi’s, sliced bananas, and a drizzle of maple syrup.
